Food temperature logs: how often to check, and what to record

Most health departments expect cold and hot holding temperatures checked every 2 to 4 hours during service, with refrigeration equipment checked at least every 4 hours and uncovered or buffet-style holding checked closer to every 2. Your local code is the authority, since most jurisdictions start from the FDA Food Code and add stricter rules on top. But if your store logs on that cadence with a name and time on each entry, you're in the conversation every inspector wants to have.

The numbers that matter

Cooking temperatures (poultry 165°F, ground meats 155°F, whole cuts 145°F) belong in your line procedures rather than the holding log, but re-heat checks after a failed hold absolutely belong in the log, with the corrective action written next to them.

What a defensible log entry contains

Every row, every time

The last line is the one that saves you. An out-of-range reading with a documented correction (product moved, unit serviced, food re-cooked to temp or discarded) reads as a store in control of its process. An out-of-range reading with nothing next to it reads as a store that knew and did nothing. Never pencil-whip the fix.

Why paper logs fail inspections

Paper temp logs have a famous failure mode: they get filled in at 4:55pm for the whole day, in one pen, in one handwriting. Inspectors know the pattern on sight. The fix is a log that stamps its own times, so a 2:00 check can only ever have happened at 2:00.
